For years I've used Fred Jone's PAT idea, but I've gotten so tired of timing and tracking it. Has anyone combined the ideas of the scoreboard, and time incentives? How did you do it? What activities do you favour for PAT?

I do exactly that! I am starting with PAT time type of idea at the end of the day for 10 mins. I will stretch it to three days here pretty soon where if they win the scoreboard three times they get their PAT time. I try to give them a choice of two or three activities that are fun but review what we have been learning. I also work recess in there or quiet ball.
